The phrase "a plot of how" is not standard in written English and may cause confusion.
It could be used in contexts where you are describing a narrative or storyline, but it would need to be part of a more complete and clear expression.
Example: "The author presented a plot of how the characters evolved throughout the story."
Alternatives: "a narrative of how" or "a story of how".
