The phrase "a gap of percent" is not correct and usable in written English as it lacks a specific numerical value.
It can be used when discussing differences in percentages, but it needs to include an actual percentage figure to be meaningful.
Example: "There was a gap of 10 percent between the two groups in their test scores."
Alternatives: "a difference of percent" or "a disparity of percent".
