The phrase "a deleted version of" is correct and usable in written English.
It can be used when referring to a version of a document, file, or content that has been removed or altered from its original state.
Example: "The author decided to release a deleted version of the manuscript that included scenes not found in the final publication."
Alternatives: "an edited version of" or "a revised version of".
