The phrase "a certain flavour" is correct and usable in written English.
It can be used when referring to a specific type or quality of taste or characteristic that is not precisely defined.
Example: "The dish had a certain flavour that reminded me of my grandmother's cooking."
Alternatives: "a particular taste" or "a distinct flavor".
