The phrase 'Feeling stretched thin' is correct and usable in written English
It is generally used to describe someone who is feeling overwhelmed or exhausted because of too many demands on their time and energy. For example, "I've had a long day at work and now I have to take care of the kids; I'm feeling stretched thin."
